Our vision for Early Cabernet has always encompassed an earthy, herbaceous note. Our journey to capture this essence led us to experiment with a diverse array of herbs - including thyme, rosemary, bay leaf, and sage, among others. Thyme, with its delicate woodsy character, really nailed it for us. We were enchanted by its natural, forest-like undertones and the harmonious way they blended with our verjus and cherry fruit.
